How do I change the demographic because it's too hard to navigate in this area when trying find the demographic section to edit it in the information page

That's not a mislabel from MAL, but from Wikipedia.

The Japanese page itself does not use the word “josei.” Furthermore, the Japanese version lists only the category “shōjo” , not “josei,” and states the magazine’s target audience is “shōjo” . Furthermore, while the bottom category on the Japanese version does list shōjo manga, it does not mention “josei manga” at all. The magazine where it's serialized is a shōjo manga magazine. Moreover, the editorial department's official Twitter account itself states in its profile description: “Our catchphrase is ‘The Evolving Shōjo Manga Magazine’”. |

Also, as said by kihel, the Japanese Wikipedia already contradicts these labels, and going further, the official publisher of the magazine officially labels it as a Shojo. Wikipedia is wrong, and has probably been misled by the 2 external news and the survey of readers. |
